- 1 tsp (5 g) kosher salt, plus more to taste

- 1 cup (125 g) all-purpose flour, divided
- 4 large eggs, separated
- 1/4 tsp (1 g) cream of tartar (optional, to stabilize egg whites)

- For beans:
- 1 can (15 oz / 425 g) refried pinto beans
- 2 tbsp (30 ml) water or broth
- 1 tbsp (15 ml) oil or lard

1. Roast and peel poblanos: char the poblanos over an open flame or under a broiler until blackened all over, about 6-8 minutes, turning. Place in a bowl and cover with plastic wrap or a lid for 10 minutes to steam, then peel off the skins, make a lengthwise slit in each chile, remove seeds and membranes, and set aside with stems intact.
