1. Prep the potatoes: Rinse and peel (if desired) the potatoes, then cut into 1/3-inch (8 mm) coins or small cubes so they cook evenly. Pat dry with a towel to remove excess moisture.
2. Heat 1/2 cup (120 ml) of the vegetable oil in a large heavy skillet over medium-high heat until shimmering. Add the potatoes in a single layer (work in batches if needed) and fry, stirring occasionally, until golden and cooked through, about 8–12 minutes per batch. Season each batch with 1 tsp (5 g) salt and 1/4 tsp (1 g) black pepper. Transfer fried potatoes to a paper-towel-lined tray and keep warm.
