2. Prep produce and dressing: While bagels toast, place arugula in a bowl. Whisk together 1 tbsp (15 ml) olive oil, 1 tbsp (15 ml) lemon juice, a pinch of kosher salt and a few grinds of black pepper; toss with arugula and set aside.
