- 1 cup (120 g) all-purpose flour
- 1/4 cup (30 g) cornstarch
- 2 tsp (6 g) Old Bay seasoning, divided

- 2 large eggs
- 2 tbsp (30 ml) milk
- 1/2 cup (120 ml) vegetable oil (for frying), plus extra as needed

- 4 brioche or potato rolls/buns
- 4 leaves iceberg or romaine lettuce, washed
- 1 medium tomato, sliced (about 6 oz / 170 g)
- 1/2 cup (120 ml) mayonnaise
- 1 tsp (3 g) lemon zest (or 1 tsp lemon juice)

1. Clean the crabs if not already prepared: remove the face/mouthparts, gills (dead man’s fingers), apron, and any loose membranes; rinse gently and pat very dry with paper towels.
2. In a shallow dish combine flour, cornstarch, 1 tsp Old Bay, cayenne (if using), salt, and pepper. In a second shallow dish whisk eggs and milk until smooth.
3. Season the cleaned crabs lightly with the remaining 1 tsp Old Bay on both sides. Dredge each crab first in the flour mixture, then dip into the egg wash, then return to the flour mixture for a light double coating; shake off excess.
4. Heat a large heavy skillet over medium-high heat. Add vegetable oil and butter and heat until shimmering and butter foams (oil temperature about 350°F / 175°C if using a thermometer). Reduce heat to medium to maintain a steady sizzle.
5. Fry the crabs in a single layer, working in batches if necessary, about 2–3 minutes per side until deep golden brown and crisp. Do not overcrowd the pan. Transfer to a wire rack set over a sheet pan or paper towels to drain and keep warm.
6. While crabs fry, split and toast the buns in a dry skillet or under a broiler until lightly golden.
7. Make the Old Bay mayonnaise: stir together mayonnaise and lemon zest or juice; taste and add additional Old Bay or a pinch of salt if desired.
8. Assemble sandwiches: spread a generous tablespoon of the Old Bay mayonnaise on both bun halves, place a lettuce leaf on the bottom half, top with a hot fried soft-shell crab, add a tomato slice (and pickle slices or a dash of hot sauce if using), and close with the top bun.
