2. Prepare the cabbage leaves: bring a large pot of water to a rolling boil. Trim the core from the cabbage and carefully lower the whole head into the boiling water for 3–5 minutes until outer leaves are pliable. Remove the cabbage and peel off 12–14 large intact leaves; return the head to the water as needed to loosen more leaves. Trim the thick center rib from each leaf so it rolls easily.
