- 1.5 lb (680 g) white fish fillets (cod, tilapia, or halibut), skin removed, cut into 1/2–3/4 in (1.3–2 cm) strips (approx. usable weight)
- 1 cup (130 g) all-purpose flour
- 1/4 cup (32 g) cornstarch
- 1 tsp (4 g) baking powder
- 1 tsp (5 g) kosher salt, plus more for seasoning
- 1/2 tsp (1.5 g) ground black pepper
- 1/2 tsp (1 g) smoked paprika (optional)
- 1 large egg, lightly beaten
- 1 cup (240 ml) cold lager beer or cold sparkling water
- 4 cups (960 ml) vegetable oil (canola or sunflower) for frying
- 12 small corn tortillas (6-inch)
- 3 cups (240 g) shredded green cabbage
- 1/4 cup (15 g) chopped fresh cilantro
- 2 limes, cut into wedges
- For the creamy sauce:
- 1/2 cup (120 g) mayonnaise
- 1/4 cup (60 g) Mexican crema or sour cream
- 1 tbsp (15 ml) fresh lime juice
- 1 tsp (5 g) garlic powder
- 1–2 tbsp (15–30 ml) adobo sauce from a chipotle can or 1 minced chipotle in adobo (optional, for smoky heat)
- 1/4 tsp (1.5 g) kosher salt, or to taste
- Optional quick pickled red onion:
- 1 small red onion, thinly sliced
- 1/2 cup (120 ml) apple cider vinegar
- 1 tbsp (12 g) sugar
- 1 tsp (5 g) kosher salt

Regional Notes:
This Baja California version uses a light beer batter and shredded cabbage rather than lettuce, and a creamy mayonnaise/Mexican crema sauce rather than a salsa-only topping. The combination of fried white fish, tangy crema, and a squeeze of lime is characteristic of Northern Mexico’s coastal taco stands.
1. If making quick pickled red onion, combine vinegar, sugar, and salt in a bowl until dissolved. Add sliced onion, press down to submerge, and let sit at least 20 minutes at room temperature while you prepare other components.
2. Make the crema sauce: in a small bowl whisk together mayonnaise, Mexican crema (or sour cream), lime juice, garlic powder, and adobo sauce or minced chipotle if using. Season with 1/4 tsp salt, taste, and adjust. Chill until ready to use.
3. Toss the shredded cabbage with a pinch of salt and the chopped cilantro; set aside. Keep lime wedges available.
4. In a shallow bowl, whisk together flour, cornstarch, baking powder, 1 tsp kosher salt, black pepper, and smoked paprika (if using).
5. Add the beaten egg to the dry mix, then whisk in the cold beer (or sparkling water) until a smooth, slightly thick batter forms. Batter should coat a spoon but still be pourable; add a tablespoon of beer or water if too thick.
6. Pat the fish strips dry with paper towels and season lightly with salt and pepper.
7. Heat oil in a deep skillet or Dutch oven to 350–375°F (175–190°C). Use enough oil to have at least 2 inches (5 cm) depth for shallow-deep frying.
8. Working in batches to avoid overcrowding, dip fish strips into the batter, letting excess drip off, then carefully lower into hot oil. Fry until golden and cooked through, about 3–4 minutes per side depending on thickness, turning as needed. Internal fish temperature should flake easily (about 145°F / 63°C). Transfer to a wire rack set over a baking sheet or paper towels to drain; keep warm in a 200°F (95°C) oven if desired.
9. Warm the corn tortillas on a hot griddle or comal for 20–30 seconds per side, or wrap in a clean towel and microwave for 20–30 seconds to make them pliable.
10. To assemble: place 2–3 tortilla rounds per serving, spread a spoonful of crema sauce on each tortilla, add a handful of shredded cabbage, top with 2–3 pieces of fried fish, and finish with a drizzle of more crema, a few pickled onion slices (if using), a sprinkle of cilantro, and a lime wedge for squeezing.
11. Serve immediately while fish is hot and crispy, with extra crema and lime wedges on the side.
