1. Preheat the oven to 425°F (220°C). On a rimmed baking sheet, toss the halved fingerling potatoes with 2 tbsp (30 ml) olive oil, 1 tsp (5 g) kosher salt, 1/2 tsp (1 g) black pepper, and 1 tsp thyme. Spread cut-side down and roast 25–35 minutes, turning once, until tender and golden.

3.
