Ingredients

- 10 oz (283 g) can diced tomatoes and mild green chiles, drained slightly (reserve 1–2 tbsp juice)
- 1 tsp (5 ml) Worcestershire sauce
- 1–2 tsp (5–10 ml) hot sauce or 1/4 tsp (0.5 g) cayenne pepper, optional (adjust to taste)
- 1/2 tsp (2.5 g) smoked paprika
- 1/2 tsp (2.5 g) kosher salt, plus more to taste
- 1/4 tsp (0.5 g) freshly ground black pepper
- 2 tbsp (8 g) chopped fresh green onions (for garnish)
- Tortilla chips, for serving

1. In a medium heavy-bottom saucepan over medium heat, melt the butter. Add the diced onion and cook, stirring occasionally, until softened and translucent, about 4–5 minutes. Add the minced garlic and cook 30 seconds more until fragrant.
2. Sprinkle the flour over the softened onion and garlic and whisk continuously for 1 minute to cook the raw flour taste and make a light roux.
