- 1 medium yellow onion, finely chopped — about 1 cup (150 g)

- 1/4 cup (60 ml) apple cider vinegar
- 1/4 cup (60 ml) apple cider or dry hard cider

Rosemary-roasted baby potatoes
- 1.5 lb (680 g) baby potatoes or fingerlings, halved if large
- 2 tbsp (30 ml) olive oil
- 1 tbsp (4 g) fresh rosemary, finely chopped (or 1 tsp dried)
