Short Description:
Traditional hand-pressed corn tortillas made from nixtamalized corn masa or masa harina, formed slightly thicker in the Tamaulipas style to give a hearty texture that holds up to stews and grilled seafood from the Gulf Coast.

Regional Notes:
In Tamaulipas, tortillas often use locally grown nixtamalized corn and are pressed a bit thicker than in central Mexico, producing a more toothsome texture and pronounced corn flavor. When fresh masa (masa nixtamalizada) from local mills is available, it is preferred; otherwise masa harina reconstituted to a slightly firmer dough replicates the regional feel.

1. If using masa harina: combine masa harina and salt in a large bowl. Stir in the warm water gradually, mixing with your hand until a soft, slightly firm dough forms. Add the optional lard or shortening and knead briefly to incorporate. Dough should be moist but not sticky; if crumbly add water 1 tbsp (15 ml) at a time until it holds.
2. If using fresh masa nixtamalizada: knead the fresh masa with the salt (and optional lard) until smooth and evenly moist; no extra water should be needed unless the masa is dry.
3. Cover the dough with a damp cloth and let it rest 15–30 minutes to hydrate fully. Resting improves pliability and flavor.
4. Divide the dough into 12 equal portions (about 1.6 oz / 45 g each for thicker Tamaulipas-style tortillas). Roll each portion into a ball and keep covered with a damp towel to prevent drying.
5. Prepare a tortilla press lined with two pieces of plastic (cut from a grocery bag) or use a heavy flat-bottomed pan and a rolling surface. Place a dough ball between the plastic and press firmly into a round about 5–6 inches (12–15 cm) across; for thicker tortillas press less thinly so thickness is about 1/8–3/16 inch (3–5 mm).
6. Preheat a comal, cast-iron skillet, or heavy griddle over medium-high heat until hot and slightly smoking. A properly heated comal gives quick puffing and good browning.
7. Peel the pressed tortilla from the plastic and carefully place it on the hot comal. Cook 45–60 seconds until edges lift and small brown spots form; flip and cook another 45–60 seconds. Flip a third time if needed and press gently with a spatula to help puffing; total cook time per tortilla is about 90–120 seconds for the thicker style.
8. Remove cooked tortillas and stack them in a clean kitchen towel or a tortilla keeper to stay warm and pliable. Repeat with remaining dough, adjusting heat as needed so tortillas brown but do not burn.
9. Serve warm as a side to grilled fish, stews, or any Tamaulipas meal. To store, cool completely and keep in an airtight container in the refrigerator up to 3 days or freeze separated by parchment for up to 1 month; reheat on a hot comal or wrapped in a damp towel in the microwave.
