- 4 bone-in Kansas City strip steaks, approx. 12 oz (340 g) each

- 2 sprigs fresh rosemary
- 2 cloves garlic, lightly smashed

- 6 tbsp (85 g) unsalted butter, softened
- 1 tbsp (15 ml) lemon juice
- 1 tbsp (3 g) finely chopped fresh parsley
- 1 small garlic clove, minced

- 2 lb (900 g) Yukon Gold potatoes, peeled and cut into 1-1.5 inch (2.5–3.8 cm) chunks
- 1/2 cup (120 ml) whole milk
- 4 tbsp (57 g) unsalted butter
- 2 cloves garlic, peeled
- 1/2 tsp (3 g) kosher salt (adjust to taste)
- 1/4 tsp (1 g) freshly ground black pepper
- 2 tbsp (8 g) chopped chives or green onions (optional)

1. Remove steaks from refrigerator 30–45 minutes before cooking so they come toward room temperature; pat dry and season generously on both sides with kosher salt and freshly ground black pepper.
2. Make the compound butter: in a small bowl, combine softened butter, lemon juice, parsley, minced garlic, salt, pepper, and lemon zest. Mix until smooth, form into a log on plastic wrap, roll tight and chill in refrigerator while you cook (or until firm), about 20–30 minutes.
3. Preheat oven to 400°F (204°C). Place a large pot of salted water on to boil for potatoes.

13. Slice and serve: place a generous scoop of garlic mashed potatoes and a portion of roasted asparagus on each plate. Slice each steak against the grain if desired, or serve whole.
