Ingredients
- 1 lb (454 g) ground pork
- 2 tbsp (30 g) pork fat or unsalted butter
- 1 medium yellow onion, finely chopped, about 6 oz (170 g)
- 1 cup (240 ml) whole milk
- 1/2 cup (60 g) dry breadcrumbs
- 1/2 tsp (1.5 g) ground cloves
- 1/2 tsp (1.5 g) ground allspice
- 1/4 tsp (0.5 g) ground nutmeg
- 1 tsp (6 g) kosher salt, adjust to taste
- 1/2 tsp (1 g) freshly ground black pepper
- 1 bay leaf (optional)
- 1 tbsp (15 ml) neutral oil (if needed)
- Toast or crusty bread, for serving
- Chopped parsley or cornichons, for garnish (optional)

Short Description:
A traditional Quebec pork spread made from ground pork, finely cooked onions, milk and spices until thick and spreadable; served cold on bread or toast as a classic starter.
Regional Notes:
This Quebec version uses ground pork slowly simmered with milk and breadcrumbs to create a smooth, spreadable paste flavored with warm spices (clove, allspice) and onions. Unlike some French terrines or pâtés, cretons is not baked but cooked on the stovetop and chilled, then served simply on toast—an emblematic breakfast or appetizer in Quebec homes.
1. Heat a heavy skillet or Dutch oven over medium heat and melt the pork fat or butter. Add the finely chopped onion and cook, stirring occasionally, until very soft and translucent, about 8–10 minutes. If the pan is dry, add the 1 tbsp (15 ml) neutral oil.
2. Add the ground pork to the pan and break it up with a wooden spoon. Cook over medium heat until the pork is no longer pink and starts to release fat, about 6–8 minutes.
3. Stir in the milk and breadcrumbs, then add the ground cloves, ground allspice, nutmeg, bay leaf (if using), salt, and pepper. Bring the mixture to a gentle simmer.
4. Reduce heat to low so the mixture barely simmers. Cover partially and cook slowly, stirring every 5–10 minutes and pressing the pork against the pan to help it break down and thicken. Continue for 40–60 minutes, until the mixture is very thick and most of the liquid is absorbed and the pork is a paste-like consistency.
5. Taste and adjust seasoning with more salt and pepper if needed. Remove and discard the bay leaf.
6. Transfer the hot cretons to a shallow container or small ramekins, smoothing the top. Allow to cool to room temperature, then cover and chill in the refrigerator at least 4 hours or preferably overnight so it firms.
7. To serve, bring cretons to cold or just-chilled temperature and spread on toast or crusty bread. Garnish with chopped parsley or serve with cornichons if desired.
