1. Prepare the fiddleheads: rinse fiddleheads thoroughly, remove any papery brown skins, and trim the brown ends so only bright green fronds remain.
2. Bring a large pot of salted water to a rolling boil. Have a bowl of ice water ready for shocking.
3. Blanch the fiddleheads in the boiling water for 2 to 3 minutes, until they turn bright green and are just tender-crisp. Do not overcook.
4. Immediately transfer the blanched fiddleheads to the ice water to stop cooking and preserve color. Leave in ice water for 2 minutes, then drain well and pat dry with a clean towel.
