- 3 tbsp (45 ml) fresh lime juice (about 2 limes)
- 3 tbsp (45 ml) extra-virgin olive oil
- 1 tsp (5 g) kosher salt, plus more to taste
- 1/4 tsp (0.5 g) freshly ground black pepper
- 4 oz (115 g) queso fresco, crumbled (optional)
- 1 small jalapeño, seeded and finely minced (optional, for mild heat)

Compared with other regions, Sonoran nopalitos salads are simple and bright—lime juice and olive oil dressing, raw tomato and onion, cilantro, and occasionally queso fresco are the defining components.

1. Prepare the nopal paddles: if not already cleaned, carefully remove spines and glochids with a knife or vegetable peeler, rinse well, then pat dry. Dice into roughly 1/2-inch (1.3 cm) pieces.
2. Cook the nopal: bring a medium pot of salted water to a boil. Add diced nopal and boil until tender and slightly translucent, 8–12 minutes depending on size. Drain and immediately rinse under cold running water, rubbing pieces gently to remove the slippery mucilage. Drain well and transfer to a bowl to cool slightly.
3. Combine vegetables: to the cooled nopal, add the diced tomatoes, onion, chopped cilantro, and minced jalapeño if using.
4. Make the dressing: whisk together the lime juice, olive oil, 1 tsp kosher salt, and black pepper in a small bowl or shake in a jar until emulsified.
5. Toss and season: pour the dressing over the nopal mixture and toss gently to combine. Taste and adjust seasoning with more salt or lime if needed.
