1. Prepare and grill the chicken: Pat raw chicken (about 1 3/4 lb/800 g) dry and season lightly with salt and pepper. Brush with a little oil and grill over medium-high heat (or barbecue) until cooked through and slightly charred, about 6–8 minutes per side for bone-in pieces or 5–7 minutes per side for boneless pieces. Let rest 5 minutes.
2. Shred the chicken: Remove skin and bones if present. Use two forks or your hands to shred the grilled chicken into bite-sized pieces until you have about 1 1/4 lb (567 g) cooked shredded meat.
3. Combine the citrus base: In a large bowl, whisk together the fresh lemon juice, optional lime juice, and soy sauce or fish sauce (if using). Taste and add the 1/4 tsp (1 g) salt and 1/4 tsp (0.5 g) pepper; adjust to balance bright and salty.
