Ingredients
- 1 lb (450 g) cleaned nopal paddles (nopalitos), diced
- 1 tsp (5 g) salt, plus more to taste
- 2 tbsp (30 ml) neutral oil or vegetable oil (for cooking nopales) OR 2 tbsp (30 ml) water for boiling
- 2 medium (about 10 oz / 280 g) Roma tomatoes, seeded and diced
- 1/2 medium (about 3 oz / 85 g) white onion, finely diced
- 1 jalapeño, seeded and finely chopped (optional) — about 1 oz (30 g)
- 1/2 cup (15 g) fresh cilantro, chopped (packed)
- 3 tbsp (45 ml) fresh lime juice (about 2 limes)
- 2 tbsp (30 ml) extra-virgin olive oil
- 1/4 tsp (1 g) ground black pepper
- 4 oz (115 g) queso fresco or panela, crumbled
- 1 large ripe avocado, diced (about 8 oz / 225 g)
- Lime wedges, for serving (optional)

Short Description:
A fresh Colima-style salad of tender diced nopal cactus tossed with tomatoes, onion, cilantro, lime and a light dressing, finished with local cheese and creamy avocado. Bright, slightly tangy, and good as a side or light meal.
Regional Notes:
This Colima variation highlights abundance of local avocado and fresh cheese (queso fresco or panela), which are commonly added in Western Mexico. The nopalitos are cooked until tender and rinsed to remove their characteristic mucilage, then combined with bright lime and cilantro flavors typical of the region.
1. Prepare the nopalitos: if they still have spines, carefully remove them and rinse. Heat a skillet over medium-high heat with 2 tbsp (30 ml) oil, or bring a pot of salted water to a boil if you prefer boiling.
2. Cook the nopales: add diced nopales to the hot skillet and cook, stirring, until the pieces turn from bright green to a deeper green and begin to soften, about 6–8 minutes; or boil for 8–12 minutes until tender. Sprinkle with 1 tsp (5 g) salt during cooking.
3. Drain and rinse: transfer cooked nopales to a colander and rinse under cold running water to remove excess slime and loosen salt. Drain well and let cool to room temperature (about 10 minutes).
4. Make the dressing: in a small bowl whisk together 3 tbsp (45 ml) lime juice, 2 tbsp (30 ml) extra-virgin olive oil, 1/4 tsp (1 g) black pepper and a pinch of salt to taste.
5. Combine salad ingredients: in a large bowl combine cooled nopalitos, diced tomatoes, diced onion, chopped jalapeño (if using), and chopped cilantro. Toss gently to mix.
6. Dress and finish: pour the lime-olive dressing over the salad and toss to coat. Gently fold in the crumbled queso fresco and diced avocado, taking care not to mash the avocado.
7. Adjust seasoning and serve: taste and add more salt or lime juice if desired. Serve immediately or chill briefly (up to 30 minutes). Garnish with lime wedges if using.
