Instructions

Short Description:
Bite-sized mushroom caps filled with a savory Connecticut-style mixture of local pork sausage, breadcrumbs, and cheese, baked until golden. A rich, shareable starter that combines meaty, cheesy, and herb notes.

Regional Notes:
This Connecticut variation centers on local pork sausage folded with fresh breadcrumbs and a blend of cheeses for a richer, meat-forward filling than some other regional versions. Using sharp cheddar alongside grated Parmesan nods to New England cheese preferences while still keeping the classic stuffed mushroom profile.

1. Preheat the oven to 375°F (190°C). Lightly grease a rimmed baking sheet or shallow baking dish with cooking spray or melted butter.
2. Clean mushrooms with a damp paper towel; twist out stems and set caps aside. Chop the removed stems finely and reserve.
3. Heat 1 tbsp (15 ml) olive oil and 1 tbsp (15 g) butter in a skillet over medium heat. Add the chopped mushroom stems and onion; sauté until softened and translucent, about 4–5 minutes. Add garlic and cook 30 seconds until fragrant. If using, pour in the white wine or stock to deglaze the pan and cook until mostly evaporated, about 1 minute. Transfer this mixture to a bowl and let cool slightly.
4. In the same skillet, add the remaining 1 tbsp (15 ml) olive oil and brown the bulk pork sausage over medium-high heat, breaking it into small pieces, until no longer pink and beginning to caramelize, about 5–7 minutes. Drain any excess fat if needed and return cooked sausage to the bowl with the onion mixture.
5. To the sausage mixture, add breadcrumbs, Parmesan, cheddar, beaten egg, parsley, thyme, Worcestershire (if using), and salt and pepper to taste. Stir until well combined; the mixture should be moist enough to hold together—add a splash of stock or another beaten egg if too dry.
6. Spoon the filling into each mushroom cap, mounding slightly. Arrange stuffed caps, open side up, on the prepared baking sheet. Sprinkle the tops with the extra grated Parmesan.
7. Dot remaining 2 tbsp (30 g) butter over the mushrooms or brush lightly with olive oil. Bake in the preheated oven until mushrooms are tender and filling is golden on top, 18–22 minutes.
8. Remove from oven and let rest 3–5 minutes. Garnish with additional chopped parsley and serve warm as an appetizer (about 4 mushrooms per person).
