- 1 lb (450 g) fresh nopal pads (nopales), trimmed and sliced into 1/4-inch (6 mm) strips
- 2 medium (about 10 oz / 300 g) Roma or vine tomatoes, seeded and chopped into 1/2-inch (12 mm) pieces
- 1/2 medium (about 3 oz / 85 g) red onion, thinly sliced into half-moons
- 1/2 cup (8 g) fresh cilantro leaves, chopped
- 2 limes, juiced (about 3 tbsp / 45 ml)
- 2 tbsp (30 ml) extra-virgin olive oil
- 1 tsp (5 g) kosher salt, plus more to taste
- 1/4 tsp (1 g) freshly ground black pepper
- 1 small (optional) jalapeño, seeded and minced (about 1 tbsp / 5 g) — optional, for a mild heat
- 4 oz (115 g) queso fresco, crumbled (optional regional cheese)
- 1 ripe avocado, sliced (about 7 oz / 200 g whole; ~4.5 oz / 130 g flesh) — optional

This Gulf Coast (Veracruz) version highlights very fresh ingredients and a simple lime-and-olive-oil dressing typical to the region, occasionally enriched with local queso fresco or avocado. Nopales are cooked and rinsed to remove mucilage, yielding a clean-tasting, slightly tangy salad rather than the grilled or stewed preparations found in other states.

1. Prepare the nopales: bring a medium pot of salted water to a boil. Add the sliced nopales and cook until tender and their bright green deepens, 8–12 minutes. Drain and immediately rinse under cold running water to remove mucilage and stop cooking; drain well and pat dry with paper towels.
2. If you prefer a lightly charred flavor, after boiling and rinsing, heat a skillet or comal over medium-high heat and quickly sear the drained nopales 1–2 minutes per side until lightly marked; allow to cool slightly.
3. In a large bowl combine the chopped tomatoes, sliced onion, chopped cilantro and minced jalapeño (if using). Add the cooled, drained nopales and toss gently to combine.
4. Whisk together the lime juice, olive oil, 1 tsp salt and black pepper in a small bowl or jar; taste and adjust seasoning.
5. Pour the dressing over the salad and toss gently until evenly coated. If using, fold in half the crumbled queso fresco now; reserve the rest for sprinkling on top when serving.
6. Arrange avocado slices over the top (if using) and sprinkle remaining queso fresco. Chill the salad for 15–30 minutes or serve at room temperature to let flavors meld.
7. Taste and adjust seasoning with additional salt or lime if needed. Serve as a bright salad course or as a cool accompaniment to grilled seafood or carnes al carbon.
