- Pinch of fine salt
- 1 tbsp (15 ml) freshly squeezed lime juice (optional, to brighten the syrup)

A classic Tabasco dessert of ripe papaya slowly cooked in a spiced sugar syrup until tender and glossy, finished with local vanilla and warm cinnamon. Served chilled or at room temperature, it is a sweet, aromatic preserve-like treat.

Regional Notes:
This Tabasco version uses very ripe local papayas and often includes Mexican vanilla for a floral, regional aroma; cinnamon sticks are used rather than ground cinnamon so the spice remains gentle. Unlike drier, candied fruit from other regions, this dulce is syrupy and spoonable, reflecting Gulf Coast preferences for saucy desserts.

1. Combine the sugar, piloncillo (if using), and 1 1/4 cups (300 ml) water in a wide, heavy-bottomed saucepan. Add the cinnamon sticks and a pinch of salt. Bring to a gentle boil over medium heat, stirring until the sugar and piloncillo dissolve.
2. Reduce heat to medium-low and simmer the syrup for 8–10 minutes to slightly thicken and meld flavors. If using a vanilla bean, add the scraped seeds and pod now.
3. Add the papaya cubes to the syrup in a single layer as much as possible. Raise heat briefly to return to a gentle simmer, then lower to maintain a slow, steady simmer. Cook uncovered, stirring gently and occasionally to prevent sticking, for 15–25 minutes, until the papaya is tender but holds shape and the syrup is glossy. If the syrup reduces too quickly, add up to 1/2 cup (120 ml) water.
4. Stir in the vanilla extract (if using extract) and the optional lime juice in the final 1–2 minutes of cooking. Taste and adjust sweetness or acidity as desired.
5. Remove from heat and let cool slightly. Remove and discard the cinnamon sticks (and vanilla pod, if used). Transfer the dulce to a bowl or sterilized jars.
6. Serve warm, at room temperature, or chilled. Store refrigerated in a covered container for up to 2 weeks, or process in jars for longer shelf life following safe canning practices.
