1. Preheat the oven to 350°F (175°C). Grease a 9x9-inch (23x23 cm) baking dish or a similar-sized ovenproof casserole with nonstick spray or butter.
2. If using bacon, cook until crisp in a skillet over medium heat, drain on paper towels, and crumble; reserve.
3. In a large bowl whisk together the heavy cream, eggs, melted butter, granulated sugar, salt, and black pepper until smooth.
4. Stir the creamed corn, fresh corn kernels, cornmeal, flour, and baking powder into the egg-cream mixture until evenly combined. Fold in 3/4 cup (86 g) of the shredded cheddar and half of the crumbled bacon (if using).
5. Pour the mixture into the prepared baking dish, smoothing the top. Sprinkle the remaining 1/4 cup (29 g) cheddar and remaining crumbled bacon evenly over the surface.
