- 1 boneless pork shoulder (paleta), approx. 3.5 lb (1.6 kg)
- 1 cup (240 ml) fresh orange juice
- 1/4 cup (60 ml) white vinegar
- 6 cloves garlic, smashed
- 2 tsp (10 g) kosher salt
- 1 tsp (5 g) freshly ground black pepper
- 2 tsp (4 g) dried Mexican oregano
- 1 tsp (2 g) ground cumin
- 2 bay leaves
- 2 tbsp (30 ml) vegetable oil
- 6 bolillo rolls (or telera), about 4.5–5 oz (125–140 g) each
- 1 1/2 cups (360 g) cooked pinto beans or 1 (15 oz/425 g) can pinto beans, drained
- 2 tbsp (30 g) lard or vegetable oil (for beans)
- 1 small white onion, finely chopped (for beans)
- 1 clove garlic, minced (for beans)
- Salt to taste (for beans)
- 2 medium ripe avocados, sliced
- 1 large ripe tomato, thinly sliced
- 4 cups (120 g) shredded iceberg or romaine lettuce

- 2 tbsp (30 ml) adobo from canned chipotles or 1 tsp (2 g) chipotle powder (for chipotle mayo)

1. Prepare the pork: Pat the pork shoulder dry. In a bowl combine orange juice, white vinegar, smashed garlic, kosher salt, black pepper, Mexican oregano, and ground cumin. Place pork in a large resealable bag or nonreactive dish and pour marinade over; massage to coat. Refrigerate at least 2 hours or preferably overnight.
2. Preheat oven to 325°F (160°C). Remove pork from marinade (reserve marinade). Pat pork dry; heat 2 tbsp (30 ml) vegetable oil in a heavy ovenproof Dutch oven over medium-high heat until shimmering.
3. Sear pork on all sides until well browned, 4–6 minutes per side. Pour reserved marinade into the pot with the bay leaves. Cover and transfer to oven. Roast until pork is tender and easily shredded, about 3 to 3 1/2 hours for a 3.5 lb (1.6 kg) shoulder.
4. Crisp the exterior (optional): For a crispier crust, increase oven to 425°F (220°C), uncover the pot, and roast an additional 15–20 minutes, basting with pan juices, until edges are caramelized and slightly crisp.
5. While pork cooks, make quick pickled red onion: In a small saucepan combine vinegar, water, sugar, salt, bay leaf, and peppercorns. Bring to a simmer to dissolve sugar and salt. Place sliced red onion in a jar and pour hot brine over. Cool to room temperature, then refrigerate at least 30 minutes (they improve after 1 hour).
6. Make refried beans: Heat 2 tbsp (30 g) lard or vegetable oil in a skillet over medium heat. Sauté 1/2 of the chopped white onion until translucent, add 1 clove minced garlic and cook 30 seconds. Add cooked pinto beans (or drained canned beans) and 2–3 tbsp (30–45 ml) of the reserved pork pan juices or water. Mash with a potato masher to desired consistency. Cook, stirring, until warmed and slightly thickened, 4–6 minutes. Season with salt to taste.
7. Make chipotle mayo: Stir together 1/2 cup (120 ml) mayonnaise and 2 tbsp (30 ml) adobo or 1 tsp chipotle powder until smooth. Adjust heat to taste.
8. Shred pork: When pork is done, transfer to a cutting board and let rest 10 minutes. Using forks or tongs, shred pork into bite-size pieces, discarding large pieces of fat if desired. Toss shredded pork with a few tablespoons of the cooking juices to keep moist; taste and adjust salt.
9. Warm rolls: Split bolillos and toast cut sides lightly under the broiler or in a skillet until golden-crisp, about 1–2 minutes.
10. Assemble the tortas: Spread a generous layer of refried beans on the bottom half of each roll. Pile 4–5 oz (115–140 g) shredded roast pork per sandwich (about 1/2 cup to 3/4 cup packed). Add avocado slices, tomato slices, shredded lettuce, pickled red onion, a drizzle of salsa verde, a spoonful of chipotle mayo, and crumbled queso fresco if using. Top with pickled jalapeno slices and cilantro sprigs. Close the roll.
11. Serve: Press slightly, cut in half if desired, and serve with lime wedges and extra salsa on the side. Leftover pork keeps 3–4 days refrigerated and reheats well for more tortas or tacos.
