2. In a large bowl, gently toss the Saskatoon berries with 3/4 cup (150 g) granulated sugar, 2 tbsp (16 g) cornstarch, 1 tbsp (15 ml) lemon juice, 1 tsp (2 g) lemon zest, and 1/4 tsp (1.5 g) salt until evenly coated. Let sit 5 minutes to macerate.
