- 1/2 cup (120 ml) low-sodium chicken stock or water
- 1 tbsp (15 g) brown sugar or piloncillo, grated (optional, balances acidity)
For the cilantro-lime rice:
- 1 1/2 cups (278 g) long-grain white rice, rinsed until water runs clear
- 2 3/4 cups (650 ml) water or low-sodium chicken stock
- 1 tbsp (15 ml) vegetable oil or butter
- 1 tsp (5 g) kosher salt
- 1/3 cup (8 g) fresh cilantro leaves, chopped
- 1 tbsp (15 ml) fresh lime juice
- Zest of 1 lime
For charred vegetables and serving:
- 1 large red bell pepper, cored and quartered
- 1 medium white or yellow onion, cut into thick wedges
- 1 tbsp (15 ml) vegetable oil
- 8 small corn tortillas (optional), warmed

1. Make the marinade: In a bowl whisk together Valentina hot sauce, lime juice, apple cider vinegar, minced garlic, 1 tsp salt, black pepper, oregano, cumin, and brown sugar (if using). Reserve 1/2 cup (120 ml) of this mixture for finishing sauce.
2. Marinate the chicken: Place the chicken pieces in a large resealable bag or shallow dish. Pour the remaining marinade over the chicken, massaging to coat. Refrigerate at least 1 hour or up to overnight for deeper flavor.
3. Preheat and prepare: Preheat oven to 375°F (190°C). Remove chicken from fridge 20 minutes before cooking to come closer to room temperature.

6. Bake until tender: Bake 30–40 minutes, until chicken reaches an internal temperature of 165°F (74°C) and is tender.
