Ingredients

- 10 oz (285 g) fresh heart of palm, trimmed and sliced into 1/4 in (6 mm) rounds
- 2 medium (10 oz / 280 g) ripe tomatoes, seeded and cut into 1/2 in (12 mm) pieces (Roma or vine-ripe)
- 1/2 medium (75 g) red onion, thinly sliced
- 2 tbsp (30 ml) freshly squeezed naranja agria (bitter orange) juice (or substitute 1 tbsp / 15 ml orange juice + 1 tbsp / 15 ml lime juice)
- 1 tbsp (15 ml) freshly squeezed lime juice
- 3 tbsp (45 ml) extra-virgin olive oil
- 1 small (about 10 g) serrano chile, seeded and finely minced (optional, adjust to taste)
- 1/4 cup (15 g) fresh cilantro leaves, coarsely chopped
- 1/4 tsp (1.5 g) kosher salt, plus more to taste
- 1/8 tsp (0.5 g) freshly ground black pepper
- 1 small (approx. 150 g) avocado, sliced, for garnish (optional)
- 2 tbsp (20 g) toasted pepitas (pumpkin seeds) for garnish (optional)

1. If your fresh heart of palm is slightly fibrous, blanch briefly: bring a pot of water to a boil, add heart of palm slices and cook 1 minute, then drain and plunge into ice water to stop cooking. Drain well. If tender, you may use raw.
2. In a small bowl, whisk together naranja agria juice (or orange/lime substitute), lime juice, olive oil, minced serrano (if using), salt, and black pepper until emulsified.
3. In a large bowl combine sliced heart of palm, chopped tomatoes, and thinly sliced red onion. Pour the citrus vinaigrette over the vegetables and toss gently to coat.
4. Let the salad rest 8–10 minutes at room temperature to allow flavors to marry (or chill up to 30 minutes for a cooler salad); taste and adjust seasoning with more salt or lime if needed.
5. Just before serving, fold in chopped cilantro. Arrange on a serving platter or divide among plates and garnish with avocado slices and toasted pepitas if desired.
6. Serve chilled or at room temperature as a starter or light salad alongside grilled fish or typical Tabasco mains.
