- For the simple syrup:
- 1/4 cup (50 g) granulated sugar
- 1/4 cup (60 ml) water
- For the chocolate glaze:
- 6 oz (170 g) semisweet chocolate, finely chopped
- 1/2 cup (120 ml) heavy cream
- 2 tbsp (28 g) unsalted butter
- 1 tbsp (15 ml) light corn syrup (optional, for extra shine)

Despite its name, Boston Cream Pie is a cake celebrated in Massachusetts; its defining regional identity is the combination of a tender sponge, rich vanilla custard (pastry cream), and a smooth chocolate ganache on top. This Boston/New England version emphasizes a light genoise-style sponge and a traditional vanilla pastry cream rather than heavier buttercream fillings found elsewhere.
1. Preheat the oven to 350°F (175°C). Grease two 9 in (23 cm) round cake pans and line the bottoms with parchment.
2. Make the sponge: In a heatproof bowl set over a simmering pot of water (bain-marie), whisk together the 4 large eggs and 1 cup (200 g) sugar until warm (about 100°F/38°C) and the sugar begins to dissolve, about 2–3 minutes.
3. Remove the bowl from the heat and beat the egg-sugar mixture with an electric mixer on high until very pale, thick, and tripled in volume, about 6–8 minutes. Beat in 1 tsp (5 ml) vanilla.
4. Sift the 1 cup (120 g) cake flour and 1/4 tsp (1.5 g) salt over the whipped eggs in two additions, folding gently with a spatula to preserve air.
5. Fold in the 3 tbsp (42 g) melted butter in a thin stream until incorporated, taking care not to deflate the batter.
6. Divide the batter evenly between the prepared pans, smooth the tops, and bake until the cakes are golden and spring back lightly, 18–22 minutes. A toothpick inserted should come out clean. Cool in pans 10 minutes, then turn out to a rack to cool completely.
7. While cakes cool, make the pastry cream: In a medium saucepan, heat 2 cups (480 ml) milk until steaming but not boiling.
8. In a bowl, whisk together 1/2 cup (100 g) sugar and 1/4 cup (30 g) cornstarch. Whisk in the 4 large egg yolks (approx. 72 g) until smooth.
9. Temper the yolk mixture by whisking in about 1/3 of the hot milk, then return the tempered yolks to the saucepan with the remaining milk, whisking constantly.
10. Cook over medium heat, whisking continuously, until the mixture thickens and comes to a gentle boil, about 1–2 minutes after it starts to bubble. Continue whisking for 30 seconds to ensure the cornstarch cooks through.
11. Remove from heat and whisk in 2 tbsp (28 g) butter, 2 tsp (10 ml) vanilla, and a pinch of salt. Transfer to a bowl, press plastic wrap directly onto the surface to prevent a skin, and chill until cold, at least 2 hours.
12. Make the simple syrup: combine 1/4 cup (50 g) sugar and 1/4 cup (60 ml) water in a small saucepan, bring to a simmer until sugar dissolves, cool.
13. Make the chocolate glaze: place 6 oz (170 g) chopped semisweet chocolate in a heatproof bowl. Heat 1/2 cup (120 ml) heavy cream until just simmering and pour over the chocolate; let sit 1 minute, then stir until smooth. Stir in 2 tbsp (28 g) butter and 1 tbsp (15 ml) corn syrup (if using) until glossy. Keep warm or reheat briefly if it begins to thicken before using.
14. Assemble the cake: If cake layers have domes, level them with a serrated knife. Place one layer on a serving plate or turntable and brush lightly with simple syrup.
15. Spoon or pipe the chilled pastry cream onto the first layer, spreading evenly and leaving a small border (about 1/4 in / 6 mm) from the edge to prevent overflow. Smooth the top.
16. Place the second cake layer on top, press gently to adhere, and chill the assembled cake 30 minutes to firm the filling.
17. Pour the warm chocolate glaze over the chilled cake, starting in the center and gently spreading to the edges so it drips slightly over the sides. If desired, smooth the top with an offset spatula.
18. Chill the glazed cake until the ganache sets, at least 30 minutes. Slice with a sharp knife wiped between cuts and serve chilled or at cool room temperature.
