1. Preheat the oven to 350°F (175°C). Butter a 9x9-inch (23 x 23 cm) baking dish or a similarly sized shallow casserole.
2. In a bowl toss the sliced apples with the lemon juice and 2 tsp (10 g) granulated sugar until evenly coated. Spread the apples in an even layer in the prepared dish and sprinkle the toasted chopped pecans over the apples. Sprinkle the 1/2 cup (110 g) brown sugar evenly across the fruit and nuts.
3. In a medium bowl whisk together the 1 cup (120 g) flour, 1 tsp (5 g) baking powder, 1/2 tsp (3 g) salt, and 1 tsp (2.6 g) cinnamon.
4. In a separate large bowl whisk the 1 cup (200 g) granulated sugar and the 3 large eggs until pale and slightly thickened, about 1–2 minutes. Whisk in the 5 tbsp (70 g) melted butter, 1/2 cup (120 ml) milk, and 1 tsp (5 ml) vanilla extract until smooth.
5. Fold the dry ingredients into the wet mixture just until blended; the batter will be fairly thin. Pour the batter evenly over the apples, allowing it to settle between slices. Dot the surface with the 1 tbsp (14 g) diced butter and sprinkle the optional 1 tbsp (15 g) coarse sugar over the top for extra crispness.
6. Bake in the preheated oven until the top is deep golden brown, set in the middle, and a thin knife inserted into the center comes out mostly clean, about 45–55 minutes. If the top browns too quickly, tent loosely with foil for the last 10–15 minutes.
