- 3/4 cup (180 ml) cold buttermilk
- 1 tbsp (15 ml) melted butter for brushing

- 1 lb (450 g) collard greens, rinsed, stems removed and chopped

1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper for the biscuits.
2. Make the biscuits: in a large bowl whisk together 2 cups (250 g) flour, 1 tbsp (15 g) baking powder, 1/2 tsp (2.5 g) baking soda, and 1 tsp (6 g) salt. Cut in 6 tbsp (85 g) cold cubed butter with a pastry cutter or fingers until mixture resembles coarse crumbs.
3. Stir in 3/4 cup (180 ml) cold buttermilk just until a shaggy dough forms. Turn onto a lightly floured surface, fold 3–4 times, pat to about 3/4 inch (2 cm) thick and cut into 8 biscuits.
