1. Preheat the oven to 425°F (220°C). Place an 8-inch (20 cm) cast-iron skillet in the oven while it heats.
2. In a large bowl, whisk together the cornmeal, flour, baking powder, sugar, and salt until evenly combined.
3. In a separate bowl, whisk the buttermilk, eggs, maple syrup, and the 1/4 cup (56 g) melted butter until smooth.
4. Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix. Fold in the corn kernels if using.
