Ingredients

Traditionally made with bolillo or day-old white bread, the slices are fried until lightly crisp and served drenched in the warm syrup.

1. Prepare the soaking mixture: In a wide shallow bowl, whisk together the milk, eggs, vanilla, and a pinch of salt until smooth. Set aside.
2. Make the syrup: In a small saucepan combine the granulated sugar (or grated piloncillo), water, cinnamon sticks, and ground cinnamon. Bring to a gentle boil over medium heat, stirring until the sugar dissolves. Reduce heat and simmer 6–8 minutes until slightly thickened. Remove from heat and stir in the rum if using. 4. Heat the pan: In a large skillet over medium heat, add the butter and oil. Heat until the butter foams and the mixture is hot but not smoking.
5. Fry the bread: Fry the soaked bread slices in batches, 2–3 minutes per side, until deep golden and slightly crisp on the edges. Adjust heat as needed so they brown without burning. Transfer finished slices to a plate and keep warm.
6. Finish with syrup: Remove the cinnamon sticks from the syrup. Arrange the fried bread on a serving platter or individual plates and spoon generous amounts of the warm cinnamon syrup over each slice so it soaks slightly into the bread.
7. Garnish and serve: Dust lightly with powdered sugar and a pinch of ground cinnamon, and sprinkle the orange zest over the top if using. Serve immediately while the syrup is warm.
