- 2 celery stalks, sliced (about 4 oz / 115 g)
- 3 cloves garlic, minced (about 9 g)
- 4 cups (960 ml) low-sodium beef broth
- 1 cup (240 ml) water
- 2 tbsp (30 ml) Worcestershire sauce
- 1 tbsp (15 ml) tomato paste
- 1 bay leaf
- 1 tsp (1 g) dried thyme or 2 sprigs fresh thyme
- 2 tbsp (28 g) unsalted butter
- 2 tbsp (16 g) all-purpose flour (for roux)
- 1 cup (150 g) frozen peas
- For the homemade noodles:
  - 3 cups (360 g) all-purpose flour
  - 4 large eggs (approx. 200 g total)
  - 1/2 cup (120 ml) whole milk
  - 1 tsp (5 g) salt
  - 2 tbsp (28 g) unsalted butter, melted
