Ingredients
- For the chicken and marinade:
- 8 bone-in chicken pieces (thighs and drumsticks or mixed pieces), approx. 8 oz (225 g) each (total ~4 lb / 1.8 kg)
- 2 cups (480 ml) apple cider vinegar
- 1/2 cup (120 ml) water
- 1/4 cup (50 g) packed brown sugar
- 3 tbsp (45 ml) Worcestershire sauce
- 2 tbsp (30 ml) yellow mustard
- 2 tsp (10 g) kosher salt
- 1 1/2 tsp (3 g) freshly ground black pepper
- 2 tsp (6 g) crushed red pepper flakes (adjust to taste)
- 2 tsp (6 g) smoked paprika
- 4 cloves garlic, minced
- 1 tsp (3 g) onion powder
- 2 tbsp (30 ml) neutral oil (vegetable or canola) for brushing
- 2 cups (approx. 480 ml) apple wood or hickory wood chips/chunks (soak chips 30 min if using a gas grill)
- For the Arkansas mop/basting sauce (thin, vinegar-forward):
- 1 1/2 cups (360 ml) apple cider vinegar
- 1/2 cup (120 ml) water
- 2 tbsp (30 g) brown sugar
- 1 tbsp (15 ml) Worcestershire sauce
- 1 tsp (3 g) kosher salt
- 1 tsp (3 g) crushed red pepper flakes
- 1/2 tsp (1.5 g) black pepper
- Optional: 1–2 tbsp (15–30 ml) hot sauce for heat
- For quick vinegar slaw:
- 6 cups (approx. 450 g) shredded green cabbage (about 1 medium head)
- 1 cup (110 g) shredded carrot (about 2 medium carrots)
- 1/3 cup (80 ml) apple cider vinegar
- 2 tbsp (25 g) granulated sugar
- 1 tsp (5 ml) Dijon or yellow mustard
- 1 tsp (5 ml) vegetable oil
- 1 tsp (3 g) kosher salt

- 1 cup (140 g) yellow cornmeal
- 1 cup (125 g) all-purpose flour
- 1 tbsp (15 g) granulated sugar (optional)

- 1/2 tsp (3 g) kosher salt
- 1 cup (240 ml) buttermilk
- 2 large eggs
- 1/4 cup (60 ml) vegetable oil or melted butter
- 2 tbsp (30 g) butter (for skillet, optional)

Regional Notes:
This Arkansas version uses an apple-cider vinegar–forward marinade and mop (basting) sauce and is slow-cooked over hardwood (hickory or oak) smoke rather than the thick tomato-based sauces common in other regions. The balance is tangy and peppery with just a touch of sweetness, and the meal is paired with simple vinegar slaw and hot cornbread in classic Southern style.
1. Prepare the marinade: in a medium bowl whisk together 2 cups (480 ml) apple cider vinegar, 1/2 cup (120 ml) water, 1/4 cup (50 g) brown sugar, Worcestershire, yellow mustard, salt, black pepper, crushed red pepper, smoked paprika, minced garlic, and onion powder.
2. Marinate the chicken: place the 8 bone-in pieces (approx. 8 oz/225 g each) in a large zip-top bag or nonreactive container and pour the marinade over the chicken. Seal or cover and refrigerate at least 4 hours, ideally overnight (8–12 hours) to let the vinegar penetrate.
3. Make mop/basting sauce and slaw dressing: whisk together mop sauce ingredients (1 1/2 cups apple cider vinegar, 1/2 cup water, 2 tbsp brown sugar, Worcestershire, salt, crushed red pepper, black pepper, and optional hot sauce). In a separate small bowl, whisk slaw dressing (1/3 cup apple cider vinegar, 2 tbsp sugar, mustard, 1 tsp oil, salt, pepper).
4. Prepare the slaw: toss shredded cabbage and carrots with the slaw dressing, taste and adjust salt/sugar. Refrigerate until serving to let flavors meld.
5. Preheat and prepare grill/smoker: set up for indirect cooking at a steady 275°F (135°C). If using a charcoal grill, bank coals to one side and place a drip pan under the indirect zone; add soaked wood chips or a couple of hickory/oak chunks directly on coals. 6. Drain the chicken: remove chicken from marinade and discard marinade. Pat pieces dry with paper towels and brush lightly with 2 tbsp (30 ml) neutral oil. Let sit at room temp 20–30 minutes while smoker holds temperature.
7. Smoke the chicken: place chicken skin-side up on the indirect side of the grill/smoker. Maintain temperature at 250–300°F (120–150°C). Smoke for about 1 hour, then begin basting with the mop sauce every 20–30 minutes and turn pieces as needed for even cooking and color. Total cook time will be 1 1/2 to 2 hours depending on piece size and heat—target an internal temperature of 165°F (74°C) in the thickest part of the thigh.
8. Finish for color and crisp skin (optional): if you prefer crisper skin, move chicken skin-side down briefly over direct heat (charcoal or direct gas) for 2–3 minutes per side near the end, watching closely to avoid flare-ups. Continue basting if desired. Remove when internal temp reaches 165°F (74°C). Tent with foil and rest 10 minutes.
9. While chicken smokes, make cornbread batter: preheat oven to 425°F (220°C). In a large bowl whisk cornmeal, flour, sugar (if using), baking powder, and salt. In another bowl whisk buttermilk, eggs, and oil. Pour wet into dry and stir until just combined.
10. Heat skillet and bake cornbread: place a 9-inch (23 cm) cast-iron skillet in the preheated oven with 2 tbsp (30 g) butter to melt. Carefully remove skillet, swirl butter, pour batter into hot skillet, and return to oven. Bake 18–22 minutes until golden and a toothpick comes out clean. Let cool 5 minutes and cut into wedges.
11. Reheat and glaze chicken (optional): if chicken rested and cooled slightly, rewarm for a few minutes in the smoker or oven at 300°F (150°C), basting once more with mop sauce just before serving for a glossy tangy finish.
12. Serve: arrange smoked Arkansas BBQ chicken on a platter with vinegar slaw and wedges of hot skillet cornbread. Offer extra mop sauce at the table for drizzling. Leftovers refrigerate up to 3 days; reheat gently to preserve moisture.
