2. Mix the dough: In a large bowl or stand mixer bowl, combine 3 1/2 cups (420 g) flour, remaining dough sugar (about 1/4 cup minus 1 tsp), and salt. Add the foamy yeast mixture, melted butter, and 1 large egg. Mix with a dough hook or by hand until a soft, slightly sticky dough forms, about 4–6 minutes on medium speed.
