- 1/4 cup (15 g) fresh cilantro, chopped
- 3 tbsp (45 ml) fresh lime juice
- 2 tbsp (30 ml) extra-virgin olive oil (or neutral oil)
- 1 tsp (5 g) kosher salt, plus more to taste
- Freshly ground black pepper to taste (optional)
- 2 tbsp (30 g) queso fresco, crumbled (optional)

1. Prepare the flor de palma: rinse the palm flowers under cold running water, remove any tough or discolored bits, and chop into bite-size pieces.
2. Blanch the palm flowers: bring a medium pot of salted water to a boil, add the chopped flor de palma, and blanch 3–5 minutes until tender but still holding shape. Drain into a colander and immediately rinse under cold water to stop cooking. Let drain well and gently press to remove excess water.
3. Combine produce: in a large bowl, add the drained flor de palma, diced tomatoes, sliced onion, minced serrano (if using), and chopped cilantro. Toss gently to combine.
4. Make the dressing: whisk together the lime juice, olive oil, and 1 tsp salt in a small bowl. Taste and adjust salt as needed.
