- 1/2 tsp (2.5 ml) coarse kosher salt, or to taste
- Nonstick cooking spray or parchment paper for baking sheets

Instructions

Short Description:
A classic Chicago snack that blends sharp cheddar cheese–flavored popcorn with a crisp, buttery caramel popcorn for a sweet-and-savory crunch. Served as a shareable snack or party appetizer.

Regional Notes:
This recipe reproduces the distinctive Chicago mix by making separate cheese-coated and caramel-coated popcorn batches and combining them; the contrast of bright, tangy cheddar powder with a deep, chewy caramel is the defining local specialty. It differs from plain caramel corn or standard cheese popcorn by intentionally pairing the two coatings in roughly equal measure to achieve the region’s signature sweet‑savory balance.

1. Preheat the oven to 250°F (120°C). Line two large rimmed baking sheets with parchment or lightly spray with nonstick cooking spray.
2. Prepare the popcorn: in a large heavy pot with a tight-fitting lid, heat the oil over medium-high heat. Add 3 kernels and cover. When they pop, add the remaining popcorn kernels, cover, and shake the pot occasionally until popping slows (about 2–3 minutes). Immediately transfer the popped corn to a very large bowl, removing any unpopped kernels. Divide the popcorn roughly in half into two bowls (one for caramel, one for cheese).
3. Make the caramel: in a medium saucepan over medium heat melt 4 tbsp (57 g) of the butter. Stir in the brown sugar and corn syrup and bring to a steady simmer, stirring frequently. Allow to simmer without stirring for 3 minutes to deepen the caramel (watch carefully to avoid burning).
4. Remove the caramel from the heat and stir in the baking soda, vanilla extract, and 1/8 tsp (0.6 ml) of the fine sea salt — the mixture will bubble and lighten in color. Immediately pour the caramel over the reserved half of the popcorn and fold with a spatula until evenly coated.
5. Spread the caramel-coated popcorn on one prepared baking sheet in an even layer. Bake in the preheated oven for 45 minutes, removing the sheet and gently stirring/tossing every 15 minutes to ensure even coating and drying.
6. While the caramel popcorn bakes, make the cheese popcorn: melt the remaining 2 tbsp (28 g) butter and drizzle it over the other half of the popcorn, tossing to coat. Sprinkle the powdered cheddar cheese evenly over the buttered popcorn, tossing until the cheese is evenly distributed. Taste and add a pinch of fine sea salt if desired.
7. When the caramel popcorn is done, remove it from the oven and let it cool on the baking sheet for 10–15 minutes; it will crisp as it cools. Break up any large clusters that are too big to eat comfortably.
8. Combine the two popcorns: transfer both batches to a very large bowl and gently fold together until you have a balanced mix of caramel and cheese pieces (adjust ratio to taste). Sprinkle the coarse kosher salt over the finished mix and toss lightly to finish.
9. Allow the combined popcorn to cool completely for 10 minutes, then serve in a large bowl for sharing. Store any leftovers in an airtight container at room temperature for up to 3 days (caramel may soften over time).
