1. Prepare the corn: for raw-fresh flavor, cut kernels from the shucked ears directly into a bowl. For a slightly smoky note, preheat a grill or a heavy skillet to medium-high, brush the cobs with 1 tbsp (15 ml) olive oil, and grill or sear, turning, until kernels show light char (about 8–10 minutes). Let cobs cool slightly, then cut kernels off into a bowl.
2. Place the corn kernels, halved cherry tomatoes, diced red bell pepper, and sliced red onion in a large mixing bowl.
3. In a separate bowl, whisk together the mayonnaise, Greek yogurt, fresh lime juice, honey, Dijon mustard, 1 tbsp (15 ml) olive oil, apple cider vinegar, kosher salt, and black pepper until smooth and creamy.
4. Pour the dressing over the corn-vegetable mixture and toss gently to combine so kernels and vegetables are evenly coated.
