Ingredients

Brisket and rub
- 1 whole packer brisket, 5–6 lb (2.3–2.7 kg), trimmed to about 4.5 lb (2.0 kg) usable
- 3 tbsp (45 ml) kosher salt
- 3 tbsp (45 ml) coarsely ground black pepper
- 2 tbsp (30 ml) paprika (preferably smoked)
- 2 tbsp (30 ml) brown sugar, packed
- 1 tbsp (15 ml) garlic powder
- 1 tbsp (15 ml) onion powder
- 1 tsp (5 ml) cayenne pepper (optional, to taste)
- 2 tbsp (30 ml) vegetable oil

Kansas-style tomato BBQ sauce
- 2 tbsp (30 ml) unsalted butter
- 1 small yellow onion, finely chopped (about 1 cup / 150 g)
- 3 cloves garlic, minced (about 9 g)
- 2 cups (480 ml) ketchup

- 1 small head green cabbage, shredded, about 8 cups (600 g)
- 2 medium carrots, grated, about 1 cup (120 g)
- 1/2 cup (120 ml) mayonnaise
- 2 tbsp (30 ml) apple cider vinegar
- 2 tbsp (30 ml) honey
- 1 tsp (5 ml) Dijon mustard
- 1/2 tsp (2.5 ml) kosher salt
