- 1/2 cup (50 g) finely grated Parmesan cheese
- 1/4 cup (15 g) fresh flat-leaf parsley, chopped
- 2 tbsp (6 g) fresh chives, chopped
- 1 tsp (1 g) fresh thyme leaves, chopped
- 1 tsp (5 ml) Worcestershire sauce
- 1/2 tsp (2.5 ml) hot sauce (adjust to taste)
- Zest of 1 lemon (about 1 tbsp / 6 g) and 1 tbsp (15 ml) lemon juice
- Salt and freshly ground black pepper, to taste
- 1 tbsp (15 ml) Pernod or pastis (optional; anise-flavored liqueur) or 1 tsp (5 ml) dry white vermouth (optional)

4. Make the Rockefeller topping: in a medium skillet over medium heat, melt 4 tbsp (55 g) butter with 1 tbsp (15 ml) olive oil. Add the minced shallots and cook 2–3 minutes until softened. Add the minced garlic and cook 30 seconds more.
5. Add the 6 oz (170 g) baby spinach and cook, stirring, until fully wilted and most moisture has evaporated, 2–3 minutes. Stir in the Pernod or vermouth if using; let it reduce by half, 1 minute. Add reserved oyster liquor, Worcestershire, hot sauce, lemon zest and lemon juice; cook 30–60 seconds.
