- 1 tsp (5 ml) lemon zest
- 3 tbsp (45 ml) extra-virgin olive oil
- 1 tbsp (15 ml) rice vinegar or apple cider vinegar
- 1 tsp (5 ml) Dijon mustard
- 1 tsp (5 ml) honey or maple syrup
- 1/4 tsp (1.5 g) kosher salt, plus more to taste
- 1/4 tsp (0.5 g) freshly ground black pepper, plus more to taste

1. If using crab legs, ensure they are fully cooked, cooled, and the meat is picked clean of shells; measure about 1 lb (454 g) of picked meat and cut into bite-sized pieces.
2. In a small bowl, whisk together lemon juice, lemon zest, rice vinegar, Dijon mustard, and honey until combined. Slowly drizzle in the extra-virgin olive oil while whisking to emulsify. Season the vinaigrette with 1/4 tsp (1.5 g) kosher salt and 1/4 tsp (0.5 g) black pepper; adjust to taste.
