1. Prepare the dough: In a large bowl combine warm water, sugar, and yeast; let sit 5 minutes until foamy. Add 2 tbsp (30 ml) olive oil, 3 1/2 cups (440 g) flour, and 1 1/2 tsp (9 g) salt. Mix until a shaggy dough forms, then knead on a lightly floured surface 6–8 minutes until smooth and elastic. Place in a lightly oiled bowl, cover, and let rise 1–1.5 hours at room temperature until doubled (or refrigerate overnight for deeper flavor; bring back to room temperature before use).
2. Make the sauce: In a saucepan over medium heat, warm 2 tbsp (30 ml) olive oil. Add minced garlic and cook 30–60 seconds until fragrant but not browned.
