1. Preheat the oven to 425°F (220°C). Toss the halved baby potatoes with 2 tbsp (30 ml) olive oil, 1 tsp (5 g) salt, 1/2 tsp (2.5 g) pepper, and thyme; spread in a single layer on a rimmed baking sheet. Roast 25–30 minutes until golden and tender, turning once halfway through.
2.
