Ingredients
- 1 lb (454 g) boneless skinless chicken thighs or breasts (to poach and shred; yields about 1 lb/454 g cooked shredded)
- 2 tbsp (30 ml) vegetable oil
- 1 medium white onion, thinly sliced
- 2 cloves garlic, minced (about 6 g)
- 14 oz (400 g) canned plum tomatoes (or diced tomatoes)
- 2–3 canned chipotle peppers in adobo, plus 1 tbsp (15 ml) adobo sauce (adjust to preferred heat)
- 1/2 cup (120 ml) low-sodium chicken broth
- 1 bay leaf
- 1/2 tsp (1.5 g) dried oregano
- 1/2 tsp (3 g) kosher salt, plus more to taste
- 1/4 tsp (1 g) freshly ground black pepper
- Pinch of sugar (optional), about 1 tsp (4 g), to balance acidity
- 6 store-bought tostada shells (crisp corn tortillas)
- 2 cups (140 g) shredded iceberg lettuce
- 1/2 cup (120 g) Mexican crema (or sour cream)
- 4 oz (115 g) queso fresco, crumbled
- 1/4 cup (15 g) chopped fresh cilantro (optional)
- 2 limes, cut into wedges

Regional Notes:
This Bajio/Aguascalientes version uses shredded chicken simmered in a bright tomato sauce tempered with chipotle in adobo, giving a smoky heat typical of the region. It is served simply on crisp tostadas and finished with shredded lettuce, Mexican crema, and queso fresco—classic local garnishes that distinguish it from other regional tingas that may use beef or different chiles.
1. If using raw chicken: place the chicken in a saucepan, cover with water (about 3 cups / 720 ml), add a pinch of salt, bring to a simmer and cook gently until internal temperature reaches 165 F (74 C), about 12–18 minutes depending on cut. Remove, cool slightly, and shred with two forks. If using pre-cooked chicken, shred to make about 1 lb (454 g) cooked shredded chicken.
2. In a blender, combine the canned tomatoes, chipotle peppers, adobo sauce, and 1/4 cup (60 ml) of the chicken broth. Blend until smooth. Set aside.
3. Heat 2 tbsp (30 ml) vegetable oil in a large skillet over medium heat. Add the sliced onion and cook, stirring occasionally, until softened and lightly golden, about 6–8 minutes. Add the minced garlic and cook 30–45 seconds until fragrant.
4. Pour the blended tomato-chipotle mixture into the skillet with the onions and garlic. Add the remaining 1/4 cup (60 ml) chicken broth, bay leaf, dried oregano, salt, pepper, and a pinch of sugar if desired. Bring to a simmer, reduce heat to medium-low, and cook, stirring occasionally, until sauce thickens slightly, about 8–10 minutes. Taste and adjust seasoning.
5. Add the shredded chicken to the skillet, stirring to coat thoroughly in the sauce. Simmer gently for 5–7 minutes so the chicken absorbs the flavors. Remove and discard the bay leaf.
6. If your tostada shells need crisping, heat them in a single layer on a baking sheet in a 350 F (175 C) oven for 5–7 minutes or warm briefly in a dry skillet until crisp.
7. To assemble, spread about 1/3 to 1/2 cup (80–120 g) of tinga chicken onto each tostada shell. Top each with a handful of shredded iceberg lettuce, a drizzle (about 1 tbsp / 15 ml) of Mexican crema, and a sprinkle of crumbled queso fresco (about 3/4 oz / 20 g per tostada).
8. Garnish with chopped cilantro if using and serve immediately with lime wedges on the side for squeezing over the tostadas.
