Ingredients
4 cups (about 180 g) finely shredded green cabbage
1 Granny Smith apple, cut into matchsticks
1 / 2 small red onion, very thinly sliced
2 celery ribs, thinly sliced
2 scallions, thinly sliced
1 / 4 cup (15 g) chopped fresh parsley
3 tbsp (45 ml) Creole or whole-grain mustard
3 tbsp (45 ml) mayonnaise
2 tbsp (30 ml) plain Greek yogurt (or additional mayonnaise)
2 tbsp (30 ml) apple cider vinegar
1 tbsp (15 ml) fresh lemon juice
1 tsp (7 g) honey
1 / 4 tsp celery seed
1 / 4 tsp kosher salt, plus more to taste
1 / 4 tsp freshly ground black pepper
2 tbsp (30 ml) olive oil
Instructions
In a large bowl, combine cabbage, apple, red onion, celery, scallions, and parsley.
In a separate bowl, whisk together mustard, mayonnaise, Greek yogurt, apple cider vinegar, lemon juice, honey, celery seed, salt, pepper, and olive oil until smooth.
Pour the dressing over the cabbage mixture and toss until evenly coated.
Let stand 10–15 minutes (or chill up to 30 minutes) to slightly soften the cabbage and meld flavors.
Taste and adjust seasoning with more salt, pepper, or lemon juice as desired, then serve alongside the Cajun dirty rice and blackened chicken.
