- 1/2 cup (60 g) celery, thinly sliced
- 1/2 cup (60 g) toasted walnuts, coarsely chopped
- 1/2 cup (45 g) shredded sharp Vermont cheddar (optional)
- 1/3 cup (80 ml) mayonnaise
- 3 tbsp (45 ml) pure Vermont maple syrup
- 2 tbsp (30 ml) apple cider vinegar
- 1 tsp (5 ml) Dijon mustard
- 1 tbsp (15 ml) fresh lemon juice
- 1 tbsp (15 ml) extra-virgin olive oil
- 1/2 tsp (2.5 g) kosher salt, plus more to taste
- 1/4 tsp (1 g) freshly ground black pepper
- 2 tbsp (8 g) fresh parsley, chopped (optional, for garnish)
