- 1 tsp (5 g) kosher salt, plus more to taste
- 1/2 tsp (1 g) freshly ground black pepper
- 12 store-bought crisp tostadas (or 12 corn tortillas for frying/baking)
- 2 cups (80 g) shredded iceberg lettuce
- 1/2 cup (120 ml) Mexican crema or sour cream
- 4 oz (115 g) queso fresco, crumbled
- 1 ripe avocado, sliced
- 4 radishes, thinly sliced (optional)
- 1/4 cup (10 g) fresh cilantro leaves
- 1 lime, cut into wedges

1. Roast or char the tomatoes and garlic: heat a cast-iron skillet or comal over medium-high heat and char the tomato halves and garlic cloves until blistered and blackened in spots, about 6–8 minutes, turning as needed. Alternatively, use broiler for 8–10 minutes.
2. Blend the sauce: transfer charred tomatoes and garlic to a blender with the minced chipotles and 1/4 cup (60 ml) chicken broth or water. Blend until smooth. Taste and add another chipotle if you prefer more heat.
3. Sauté the onion: in a large skillet, heat 2 tbsp (30 ml) vegetable oil or lard over medium heat. Add the sliced onion and cook, stirring occasionally, until soft and translucent, about 6–8 minutes. Stir in the dried oregano, salt, and pepper.
4. Simmer the tinga sauce: pour the tomato-chipotle purée into the skillet with the onions. Bring to a gentle simmer and cook until the sauce thickens and the flavors meld, about 8–10 minutes. If the sauce becomes too thick, add up to 1/4 cup (60 ml) more chicken broth or water.
5. Add the shredded chicken: stir the 1.5 lb (680 g) shredded chicken into the sauce, mixing thoroughly so the meat is evenly coated. Reduce heat to low and simmer for 8–10 minutes so the chicken absorbs the sauce. Adjust seasoning with more salt or a squeeze of lime if desired.
6. Prepare tostadas (if making from tortillas): to fry, heat 1–2 cups (240–480 ml) neutral oil in a heavy skillet to 350°F (175°C).
