6. Add the evaporated milk (1/2 cup / 120 ml) and whole milk (1/4 cup / 60 ml) to the egg mixture, then stir in the vanilla (1 tsp / 5 ml), cinnamon (1 tsp), nutmeg (1/4 tsp), and salt (1/4 tsp).
7. Fold the liquid mixture into the mashed sweet potatoes until fully combined and the filling is smooth and silky. Scrape the mixture into the chilled pie crust and smooth the top with a spatula.
8. Bake on the center rack of the oven at 350°F (175°C) for 50–60 minutes, or until the filling is set around the edges but still slightly jiggly in the center. If the crust browns too quickly, tent with foil after 30 minutes.
