- 1/2 cup (75 g) frozen peas (no need to thaw)
- 1/2 tsp (3 g) kosher salt, plus more to taste
- 1/4 tsp (0.5 g) freshly ground black pepper
- 1 small jalapeño, seeded and finely chopped (optional, about 15 g)
- 2 tbsp (8 g) fresh cilantro, chopped (for garnish)
- 1 lime, cut into wedges (for serving, optional)

1. Prepare the tomato purée: In a blender or food processor, combine the quartered Roma tomatoes (or canned tomatoes) with the smashed garlic and blend until smooth. Set aside.
2. Rinse and drain the rice: Place the rice in a fine-mesh sieve and rinse under cold water until the water runs clear to remove excess starch; drain well.
3. Toast the rice: In a heavy 3–4 qt (3–4 L) saucepan over medium heat, warm the oil. Add the drained rice and cook, stirring frequently, until the grains are opaque and lightly golden, about 6–8 minutes. Be careful not to burn.
