- 2 celery stalks, about 3 oz (85 g), sliced
- 3 garlic cloves, minced
- 2 tbsp (30 g) all-purpose flour
- 3 tbsp (45 ml) vegetable oil or rendered bacon fat
- 6 cups (1.4 L) low-sodium chicken or pork stock
- 1 cup (240 ml) water (adjust as needed)
- 2 tbsp (30 ml) tomato paste
- 1 tbsp (15 ml) Worcestershire sauce
- 1 tbsp (15 ml) cider vinegar

1. Prepare the pig's feet: place pig's feet in a large pot and cover with cold water. Bring to a rapid simmer and blanch 10 minutes to remove impurities. Drain and rinse feet under cold water; discard blanching water.
2. Make meatball mixture: in a bowl combine ground pork, breadcrumbs, egg, milk, 1/2 tsp (2.5 g) salt, 1/4 tsp (0.6 g) black pepper, and a pinch of thyme. Mix gently, form into about 12 small meatballs (approx. 1.5 oz / 45 g each). Refrigerate until needed.
3. Brown aromatics and salt pork: in a large Dutch oven or heavy pot heat 2 tbsp (30 ml) oil over medium heat. 7. Thicken and finish: if gravy needs thickening, mix 1–2 tbsp (8–16 g) flour with 2–3 tbsp (30–45 ml) cold water to make a smooth slurry and whisk into simmering stew; cook 3–5 minutes until slightly thickened. Alternatively, remove a cup of cooking liquid, whisk in 1 tbsp (8 g) cornstarch until smooth, then add back and simmer to thicken.
