Ingredients

- 1.5 lb (680 g) cooked octopus (tentacles), trimmed and cooled
- 6 cups (1.4 L) water (for poaching, if starting with raw octopus) or reserved cooking liquid
- 1 tbsp (18 g) kosher salt (for poaching)
- 2 cloves garlic, crushed
- 1 bay leaf
- 6 whole black peppercorns
- 3 medium Roma tomatoes, seeded and diced, about 12 oz (340 g)
- 1/2 medium red onion, thinly sliced, about 4 oz (115 g)
- 1/2 medium cucumber, peeled and diced, about 4 oz (115 g)
- 1 small jalapeño, seeded and finely chopped (or to taste), about 0.7 oz (20 g)
- 1/3 cup (50 g) green olives, pitted and sliced
- 2 tbsp (30 g) capers, drained
- 1/2 cup (10 g) fresh cilantro, chopped (packed)
- 1/4 cup (60 ml) fresh lime juice (about 2–3 limes)
- 3 tbsp (45 ml) extra-virgin olive oil
- 1/2 tsp (1 g) dried Mexican oregano
- 1 tsp (6 g) kosher salt (or to taste) for dressing
- 1/4 tsp (1 g) freshly ground black pepper
- 1 tsp (4 g) sugar or honey (optional, to balance acidity)
- Lime wedges, for serving
- Optional: 1 medium avocado, diced, about 7 oz (200 g)

This Gulf Coast Veracruz version highlights local ingredients and the classic "a la veracruzana" accents: fresh tomatoes, green olives and capers alongside bright lime and cilantro. Unlike stewed Veracruz seafood preparations, this salad is served cold and focuses on the crisp, acidic dressing and seafood tenderness typical of coastal Veracruz salads.

1. If using raw octopus: bring 6 cups (1.4 L) water to a simmer with 1 tbsp (18 g) kosher salt, crushed garlic, bay leaf and peppercorns. Submerge octopus, simmer gently until just tender when pierced with a knife, 35–60 minutes depending on size. Remove, let cool in the cooking liquid or ice bath, then drain. If using pre-cooked octopus, rinse and pat dry.
2. Cut the cooled octopus into bite-size pieces, aiming for roughly 3/4–1 inch (2–2.5 cm) pieces so they hold texture in the salad.
3. In a large bowl combine diced tomatoes, sliced red onion, diced cucumber, chopped jalapeño, sliced olives, capers and chopped cilantro. If using avocado, wait to add it until just before serving to avoid browning.
4. Whisk together the dressing: fresh lime juice 1/4 cup (60 ml), 3 tbsp (45 ml) olive oil, dried Mexican oregano, 1 tsp (6 g) kosher salt, 1/4 tsp (1 g) black pepper and sugar or honey if using. Taste and adjust seasoning.
5. Add the chopped octopus to the vegetable mixture, pour the dressing over and toss gently to coat. Cover and refrigerate at least 30 minutes (preferably 1–2 hours) to let flavors meld and to serve properly chilled.
6. Before serving, taste and adjust salt and lime as needed. If using avocado, fold in the diced avocado just before plating. Serve cold with lime wedges and extra cilantro as garnish.
