- 1/3 cup (40 g) yellow onion, finely minced
- 1/3 cup (40 g) green bell pepper, finely minced
- 1/4 cup (30 g) celery, finely minced
- 2 tbsp (8 g) green onions, sliced (scallions)
- 2 tbsp (8 g) fresh parsley, chopped
- 1/2 tsp (2.5 g) kosher salt, plus more to taste
- 1/4 tsp (1 g) freshly ground black pepper
- About 4 cups (960 ml) vegetable oil for deep frying (or enough for 2–3 in/5–7 cm depth)
- Lemon wedges, for serving (optional)

- 1/2 cup (120 g) mayonnaise
- 2 tbsp (30 g) Creole mustard (or Dijon if unavailable)
- 1 tbsp (15 ml) ketchup
- 1 tbsp (15 ml) lemon juice
- 1 tsp (5 ml) Worcestershire sauce
- 1 tsp (5 ml) hot sauce
- 2 tbsp (30 g) chopped dill pickle or cornichons
- 1 tbsp (8 g) chopped parsley
- 1/2 tsp (2.5 g) Creole seasoning

This Louisiana variation adds peeled crawfish tails to a savory beignet batter and uses Creole seasoning, hot sauce, and the local trinity (onion, bell pepper, celery) for authentic flavor. Unlike sweet New Orleans beignets, these are savory fritters highlighting Gulf seafood and Cajun/Creole spice profiles.

1. If your crawfish tails are cold from refrigeration, pat them dry and roughly chop any larger tails into bite-size pieces. Set aside.
2. In a small skillet over medium heat, warm 2 tbsp (30 ml) vegetable oil. Add the minced onion, bell pepper, and celery and cook, stirring, until softened but not browned, about 3–4 minutes. Remove from heat and let cool slightly.
3. In a large bowl whisk together the flour, cornmeal, baking powder, Creole seasoning, cayenne, salt, and black pepper.
4. In a separate bowl beat the eggs, then whisk in the buttermilk, Worcestershire sauce, 1 tbsp (15 ml) hot sauce, and 2 tbsp (30 ml) vegetable oil.
5. Pour the wet ingredients into the dry ingredients and stir until just combined; batter should be thick but spoonable. Fold in the cooled trinity (onion/pepper/celery), chopped crawfish tails, sliced green onions, and chopped parsley. Do not overmix.
6. Make the remoulade: in a small bowl combine the mayonnaise, Creole mustard, ketchup, lemon juice, Worcestershire, hot sauce, chopped pickles, parsley, and Creole seasoning. Taste and adjust seasoning; refrigerate until serving.
7. Heat the frying oil in a deep pot or Dutch oven to 350–365°F (175–185°C). Use a candy/thermometer if available. Keep a baking sheet lined with paper towels or a wire rack ready for draining.
8. Using two spoons or a small cookie scoop (about 1 tbsp/15 ml), drop rounded portions of batter into the hot oil, working in batches so they have space to fry (do not overcrowd). Fry until golden brown and puffed, about 2–3 minutes, turning once for even color.
9. Transfer cooked beignets to the paper towel–lined sheet or rack; sprinkle lightly with salt while hot. Keep warm in a 200°F (95°C) oven if making multiple batches.
10. Serve warm as an appetizer with the remoulade and lemon wedges on the side. Each serving yields approximately 6–8 beignets; total yield varies with scoop size.
