1. Place the marionberries, granulated sugar, honey, lemon juice, lemon zest (if using), vanilla extract, and a pinch of salt in a medium saucepan over medium heat. Stir to combine.
2. Bring the mixture to a gentle simmer, stirring occasionally. As the berries heat, they will begin to release their juices and break down, about 5–7 minutes.
3. While the berries simmer, mix the cornstarch with the cold water in a small bowl to make a smooth slurry.
4. Once the compote is simmering and has loosened, stir in the cornstarch slurry and continue to simmer for 1–2 minutes until the mixture thickens slightly. If you prefer a looser compote, use half the slurry and add more only if needed.
5. Remove the pan from the heat and stir in the unsalted butter, if using, until melted for a glossy finish. Taste and adjust sweetness or acidity with a little more honey or lemon juice if desired.
6. Let the compote cool for 10–15 minutes to thicken further; it will continue to set as it cools. Transfer to a serving dish or jar.
7. Sprinkle with toasted, chopped Oregon hazelnuts just before serving if using. Store refrigerated in an airtight container for up to 7 days. Rewarm gently before serving if desired.
